You'll see in the welcome wagon what the 30BaD calorie guidelines are and why they are what they are, as well as what high cal fruits to stick with in the beginning. Dr. Doug puts most folks on banana island to start out, you might consider doing this while your stomach stretches as it gets used to the higher water content foods. You will get there in time for sure, just keep learning and focusing on getting enough sugar, water and sleep.

Only recently I've realized I've had no energy, motivation and was cranky, and unable to think because 1000 cals was simply not enough. Now I'm trying really hard to hit that 2000 mark, but it feels near impossible, I want to stop eating at like, 600 cals for the rest of the day. Even smoothies really fill me up D8

By all means DON'T WAIT ONE HOUR TO EAT MORE BANANAS. Eat them as soon as you can! Usually, it will only take 10 or 15min till the bananas you've eaten have progressed sufficiently in your digestive tract so as to allow you to eat more.
The most important thing is eating enough. Proper food combination and correct timing between meals or between eating and drinking are secondary to it.
