I made the most delicious soup/stew last night. My partner and I were licking our bowls.
Juice of one orange
a few sun dried tomatoes
one pint of cherry tomatoes
maybe five stalks of celery
a few large handfuls of baby spinach
and half a bell pepper
Then I chopped up more bell pepper, spinach, celery, tomato and some cucumber in small cubes to put on top.
Tonight I think I'm going to experiment with using romaine instead of spinach since I'm not that comfortable with the oxalic acid content.
The night before I chopped up bell pepper, tomato, celery, cucumber and mixed it with blended avocado, tomato, lime, a romaine. Then ate it in wrapped up romaine leaves. That wasn't THE BEST, but good. I think the secret is adding something sweet.
