Some guidelines

Welcome! Feel free to talk about cooked VEGAN food here.  We suggest you stick to discussing high carb cooked vegan foods like potatoes, root vegetables, rice with minimal dressing if any as they are the most healthful cooked food choices. Below is a transition diet I 'created' for those of you coming from a SAD lifestyle and wanting to make the switch to a high carb RAW vegan lifestyle.

Here are some guidelines that we support, put together by the super helpful PK

  • Cooking is for emergencies only such as financial reasons and or there is no ripe fruit available, then low fat cooked starches may be an acceptable back up plan.
  • It's always healthier to steam than any other cooked method.
  • Corn and Root vegetables digest better than grains like rice.
  • Always choose foods that are vegan and promote compassion towards our fellow earthlings. We do not support the discussion of non-vegan cooked foods in this group or on the 30BaD forum.
  • Avoid dairy products for compassionate and health reasons:  http://www.notmilk.com/
  • Cooking denatures food.  Try to plan for at least 75% of the diet to be raw fruits and leafy greens.
  • Cooked foods should still be low fat for weight control and cardiovascular health and optimum energy.
  • Continue to focus on high carb high calorie sources and the more nutrient dense, the better.
  • Fruits do not mix well with cooked foods and or grains.  An idea is to eat fruit meals during the day, and perhaps end the day with a big salad and bowl of steamed rice.
  • Cooking should be simple, with as little processing and as few ingredients as possible, and foods should resemble their original states such as steamed broccoli verses cookies.
  • This is not a license to kill foods with salt and spices or to eat McDeaths french fries.  A bowl of steamed rice is fine, hold the oil, salt, and spices.
  • Continue to follow other guidelines such as avoiding booze, tea, coffee, soda, drugs, etc.  Read more here: http://www.rawfoodexplained.com/science.html
  • Cooking is for emergencies only, and not for a transition tool.  We still recommend going 100% low fat raw fruit and leafy green for optimum digestion and health results.  As we have said before, one cannot ride two horses (or bikes;D) with the same bum.  For best results and to get over addictions, just do it 100% if and when possible.
  • While high carb cooked vegan fare makes for the best backup plan when we're not able to find delicious raw fruits and vegetables, the use of toxic ingredients defeats the benefits of this fallback position. Therefor, in all cooked-food discussions, we expect members to abide by our list of unsupported ingredients. If you're going to eat cooked vegan food, keep it simple: bare cooked potatoes or rice, steamed veggies and such.
  • Whenever possible, choose ripe fruits and leafy greens.  Primates and humans cannot manufacture vitamin C, and must consume it in fruit and greens, or they may develop sub-clinical symptoms of scurvy which could include things like skin ulcerations and mouth infections.  Grains and some beans do not have vitamin C, and some beans and potatoes that do have minimal amounts, may have the vitamin C rendered useless via cooking.
  • Continue to consider that some of the cheaper so called starch foods have little or no vitamin C, and are usually high in protein.  These foods may cause an acid condition in the body that can contribute long term to arthritis, osteoporosis, tooth decay, kidney problems and kidney stones and cancer.  Grains can also cause indigestion, Crohn's disease, irritable bowel syndrome, celiac disease, colitis, constipation, diarrhea, bloating, gas, and indigestion.
  • Again, it is recommended that as soon as circumstances allow, that one should resume eating a low fat raw fruit and tender leafy green based diet.  For some folks, that may be as easy as downgrading the house and car payment.
  • To save a little money now and go the starch route, only to get sick and have to pay for doctors and medications later on is a decision one will have to ask themselves if it is worth the risk involved.

BTW, I have known millionaires and people making over 100K a year who cannot afford fruit because they are maxed out financially on the McMansions they have bought and the beamers and benzes they drive.

Great advice PK, to be a successful long term high carb raw vegan eating enough is a must

I caution everyone to make sure you are eating at least 2500 calories a day.  Eating less than that leads to calorie, nutrient, and calcium deficiencies.  While it might seem ok for a day or two, long term  people are risking osteoporosis and systemic tooth decay and crumbling.  

So, train your stomachs, and find a few good foods that suit you and  your needs, and make sure to eat enough.

You can relax.  I actually tell people to avoid the kale and the cucumbers:D

I only suggest to members to eat the tender leafy lettuces like romaine and iceberg.  (Lettuces)

I highly discourage people from eating cruciferous veggies like kale:D))), and root veggies like carrots.  

Reasons:

For optimum digestion, avoid cruciferous veggies like broccoli and cauliflower, and root vegetables like carrots. Some of our members have had problems such as sour stomach, stomach pains, diarrhea, constipation, gas, bloating, and pain from these vegetables, and or slowed digestion which makes it difficult to eat enough calories during the day.

For optimum long term oral health, many of our members have had success eating about a pound of their favorite lettuces a day.

PK, what greens do you suggest besides, various lettuces, celery, and cucumbers?  Those are the three I have been eating.  Do not suggest Kale because they upset my stomach and give me the runs.

@Stephanie, 

You might be able to satisfy your salt tooth by eating mono meals of oranges or tomatoes, and some people like celery although I caution people to stop celery if they have indigestion.  

Make sure you are eating a pound or more of leafy lettuce greens a day to to make sure your mineral and chlorophyll needs are satisfied.  

Now if you cannot eat volume do to some condition, then only do moderate exercise and or simple toning so that your calorie needs do not go too high.

I just go by TiVo's advice: eat until you feel full.  The reason some people can eat junk food all day with no exercise while weighing 140 lbs and others have same diet/exercise and weigh 300 lbs is that not all people are alike.  Some people digest food very fast and need a lot going in to get what the body needs.  Some people have a Dutch digestive system that does not need as much food to get what the body needs.  As long as your food is good quality, go by feel for quantity.  Also, of course, heed professional medical advice.  I realize this won't cure all your woes, but I would encourage you to avoid taking generic advice your personal all-truth.  I'm curious if your condition is dependent on whether you eat fast or slow?  If you take several hours to drink a 32 oz. green smoothie, would that be better than drinking it at a normal rate and going a while without eating?

It doesn't matter, Cheytan.  Volume is volume in my case.  I see to have a limit as to how much I can eat in a single day as my vision reveals.  I have something called monocular polyopia, which is a defect of the cornea and is worsened by the presence of cooked foods and eating lots of fruit.

As far as volume try eating six meals of less volume, I have to do this with low fat vegan cooked food too.

Please!  Help...  I have been vegetarian for over 18 years, vegan for close to 14 of these years (8 years continuous this time), and I have been yo-yoing between cooked and raw for about 3 years now, and I'm getting to the point where just a few evening meals causes my feet and lower legs to swell, and I can feel tingling in my feet.  When I am all raw for several days in a row, these symptoms disappear entirely.  What is going on?

The longest I have gone raw is 59 days, and I broke it because I was cold in a cooler climate while visiting family, and I was freaked out about having to have my AC fixed and adding to my repair bills that I hadn't even paid off yet.  I felt HUNGRY and couldn't eat enough fruit.

The problem I have is that I get "sweeted out" and feel the need for salty tastes.  Also, I cannot eat the kind of volume you advocate, because my vision suffers when I eat that much.

Either that or become a health coach.  no offense to Harley and Freelee -- they're great, but there are some others who have convinced me anyone can do it.
