I was trying to go 100% lfrv an first, but I ended up with some problems. So I realized that I was just moving too fast and for me, it seemed like a slower transition would fit me better. So I "allowed" myself to have one cooked vegan meal at night, but very soon not so much cooked things seemed to interest me any more, everything made me tired, slow, get up hard next morning, ...
So what remains now of my "cooked vegan meal" is a huge salad mixed with a portion of (unsalted) rice, sometimes white Basmati, sometimes brown rice. What I like to mix with the rice is at the moment vegtables like tomatoes, cucumbers, leafy greens of all kind, sweet corn (veeery tasty with rice!). Sometimes I put an avocado in it, too. I tried nuts in the salad, but I personally do not like at all what they are doing to me.
So I eat fruit all day, usually in 2-4 meals, depending very on how much I move that day, and the salad with rice in the evening, not too late (at about 6pm). That works (for now) VERY perfekt for me, I'm sure I will quit the rice some day, but I'm not in any hurry with it.
Feels good for me :))
What do you think about rice?

Permalink Reply by Dovima on June 17, 2012 at 11:20am I get a mild inflammatory response to it= feel a little achy and irritable the next day. Other wise I'd be eating it. But it's hard for me to eat it without oil and soy sauce. Glad it works for you though!

When I make stir-fry: I boil my veggies (carrots, onions, peppers, and broccoli) in some water with garlic powder, onion powder, or other spices (ginger, curry powder) if you want to avoid salt. While you're boiling your veggies, boil your rice. Once both are boiled, add rice to pan of veggies and mix together (let steam together for a couple of minutes.) Man, I could eat that every day. Sometimes I'll eat stir-fry (without oil, of course) for lunch and dinner!
Do whatever your body craves. If you feel sluggish after eating rice, it may be the quantity of rice you're eating. Just eat a small bowl and store some in a jar for later. Simple as that.
