I have a biochemistry exam tomorrow and this is some of the things I've been studying:

 

Dietary Carbohydrate Influence Nutrient Oxidation:

 After you eat, most dietary carbohydrate is readily oxidized: either used immediately for

cellular functions or converted to glycogen for storage in the liver and the muscles. On

days when you eat a lot of carbohydrate, more carbohydrates are oxidized. A metabolic

process called diet-induced thermogenesis, may increase.

The elevation in your blood glucose and the increase in your glycogen stores put the brakes on appetite (in most people) so you do not eat more than you can use.

As a result, glycogen storage in the average person rarely reaches maximum capacity, which is about 1,500 carbohydrate calories.

Balance between carbohydrate intake and storage could also occur if excess carbohydrate

were stored as fat. It is theoretically possible for this to occur. However, having enough

excess carbohydrate to convert to fat would require an extremely high carbohydrate

intake for several days. Some experts have estimated that an intake of 2,0002,500 kcal of carbohydrate over several days, after carbohydrate stores were at maximum, would be required before carbohydrate would be converted to fat.

Dietary Fat Influences:

 If you decreased your carbohydrate intake? Would this force more fat to be burned?

Many popular high-fat, low-carbohydrate diets would lead you to believe so. Unfortunately,

replacing dietary carbohydrate with fat promotes obesity for several reasons:

1. Although the fat in your diet creates a feeling of stomach fullness, fats are overall less satiating than carbohydrates.

2.Carbohydrates control the rate of fat oxidation (fats burn in a carbohydrate flame),

and when carbohydrate stores run low, fat oxidation slows.

3.Fat intake does not stimulate an equal and proportional increase in fat oxidation.

When fat oxidation is less than fat intake, fat storage results

4. Unlike glycogen, fat stores are not limited in size.

What about cooked carbs ? i refer to  rice potatoes, not junk food. Can  i eat them unlimited? I know this site doesn't promotes cooked food, but right now this is the situation in my family. So please tell me about cooked carbs, should i limit them?

yeah if you read some of the books like Neal Bernard Turn off Your Fat Gene you can eat like 2x amount of carbs

i would limit them as much as possible... cooked carbs like rice, potatoes, yams, bread whole grain or not have more calories and spike your insulin levels more than fruits and veggies... 

eat unlimited fruits and veggies and less cooked carbs...

and don't feel bad about eating cooked food... no ones perfect and the fact that your hear learning and asking questions is GREAT!!! 

P.S. im still transitioning... i occasionally have stream veggies (but don't tell anyone)... lol

from my experience carbs don't necessary make you fat

but it depends on what type of carbs and how much of each type of carb you consume...


for example, if you eat a lot of fruits and veggies these will not make you gain weight because they are low in calories, have low glycemic indexes, and low glycemic load... it would be nearly impossible to eat enough fruit and veggies only and gain weight


on the other hand, if you eat a lot of refined/processed carbs whether whole grain or not you will gain weight... ex. whole grain pasta, whole grain or white bread, brown or white rice, potatoes, yams, yes you will gain weight... these carbs contain more calories by volume and have higher glycemic indexes and loads...

          and yes extra carbs do eventually get converted to fat if you eat too many carbs but as i stated earlier this is close to impossible to do with fruits and veggies but easy to do with refined/processed/ starchy grains, breads, rice, pasta, etc.

            thats why if you look at freelee and durianrider they are so fit and thin... they do not eat processed/refined carbs... they only eat fruits and veggies...

SO GRAB A CUCUMBER AND SOME APPLES AND MUNCH ON!!!!!

Excellent post!  It's great to know the hard facts behind the diet.  It really helps in convincing people.  I've ran into many people that even though high carb, low fat vegans are leaner and healthier than their paleo buddies they just won't listen.  Science is the only way to go with them usually...

Good information! So basically you can eat all you want but you will only burn fat through exercise?
