my favorite lately is grape tomatoes, champagne mangos (about 3:2 ratio), cilantro and chives all chopped up, mixed, and allowed to sit about a half hr or more (or less) and wrapped up in lettuce leaves (romaine, iceberg, or boston/butter).. celery is another good addition, either mixed in or chopped up and used as a base to the wraps
for the past week my dinner has been a couple of spiralized zucchinis on a bed of spinach. i blend a mango, some tomato, and a splash of lemon juice and pour it on top. can;t get enough of the flavors!
Tomatoes about 4 large or 5-6 small--must be really ripe or else the soup won't be that good
1/2 of a red, yellow, or orange bell pepper
juice of one lime
2 stalks of celery
a few dates
basil or cilantro to taste
blend that all up
Then garnish with diced avocado or diced cucumber
Spiralized zucchini noodles with diced cherry tomatoes, and diced avocado on top. Squeeze lime juice on and garnish with cilantro.
I just blended some cauliflower in the Vitamix with a bit of zucchini. Then I mixed it with zucchini pasta. It was very good. Perhaps avocado could be added for a creamier texture. It tasted kinda like garlic-y cheese sauce. Not quite the same consistency- but it was good- not at all what I was expecting! :) It had close to the consistency of mashed potatoes. I used about one small head cauliflower and about a 2-inch piece of zucchini.
