yes you can eat it. its the part you should mostly eat. 95 percent of the nutrients are in the rind.

Why are you juicing that gorgeous watermelon?? 

I do eat the rind, though.  I dig my spoon right down into the white so that when I'm done there's just a skinny bit of green rind.  That way you get two flavours and more textures.
