I like just blending 2-3 mangoes or oranges, but it sounds like you probably can't use the oranges

I've blended up grapes alone as a dressing.
Dates blended up with water to desired consistency poured over romaine, pink lady apples (or other tart crisp apple), and celery makes a lovely salad with or without the romaine.
Cucumber blended with zucchini and a soft herb like dill or cilantro is nice.
Experiment with red bell peppers...
Mango and celery is great..
When summer comes nectarines or cherries...you just have to experiment to see what works for you :)
just tomatoes and oranges. I love a thick sauce ( I used to be the person to cover there salad in ranch dressing. lol)

A nice, thick sauce is mangoes, dates, baby spinach (or other leafy greens) and basil.
