Ladies and gentlemen! I've just made the best soup/zucchetti sauce I've ever tasted and I thought I would share my recipe! It's even a hit with my non-veg friend.
Ingredients:
- 5 small ripe tomatoes
- 2 large red bell peppers (I like to keep the middle seeds to add some texture)
- 2 tangelos
- A SMALL thumb of peeled ginger (equivalent to a centimeter cubed)
- The peels from the cucumber/zucchini I'm about to turn into noodles
- A handful of greens, whatever you like, I put in a bunch of arugula/green and red leaf lettuce
Whirl in a blender and enjoy! I'm having it as a soup now, and poured the rest over my spiralized cucumber and zucchini.

I made it again yesterday, but didn't have any greens to put in, and it wasn't as good (still very delish though), so make sure to add your greens!

It was very good but too tomatoe tasting. I used the cherry tomatoes as she states, maybe that was what made the difference. And, I love tomatoes!! I'm trying Esra's next time.

If you make my nameless recipe :p, make sure you use mixed green (with arugula and green/red lettuce). I made it the next day without greens and it was good but not as good as I made it the first time - the only thing I had changed is the greens! Add the greens and the peels in last in the blender so they don't blend all the way, and you can kinda see the little specs...lol i should've taken a picture :). Also (one last thing :D!) if you like ginger, I would add a little more too.

RawfullyOrganic's Marinara sauce truly was a disappointment. I would probably add some herbs to yours also. Hope you don't mind. I am falling in love with herbs.
