No gassy, no ripey!!!
Bananas do produce some of the (ethylene) gas on their own and depending on how green they are they probably will not ripen properly/fully if they have not been commercially gassed.
99% of my bananas are gassed. Its a NON issue. :)
They use ethylene gas. Thats what you get when you put bananas in the pantry overnight and open the door.
As long as they were not picked too under-ripe, green non-gassed bananas should ripen fine.
Wrap them in brown paper bags to hasten ripening, or put a ripe 'nana next to them.
They will take longer to ripen than gassed bananas, but how long depends on room tempeerature.
I try to buy un-gassed bananas whenever possible from local growers. Sometimes they come very green and take a while to ripen, sometimes they come yellow and ripen in a few days - depends on how long they were left on the plant.
