30 Bananas a Day!

Jakfruits are coming into season here in Northern India. The local folks use them like vegetables. They pick them green and cook them in curry dishes as if they were a vegetable. I would definitely like to eat them as a fruit. I have limited experience with jakfruit so my question for y'all is: will most green ones eventually ripen? How do I choose good ones that have the potential to ripen? Thank you!

I don't know for sure. I only had one green one that a storm blew off the tree. It eventually went soft but developed an obnoxious smell, and it tasted of nothing.

I also read some information for commercial growers here (where it's only grown as fruit), and that said to not pick it unless it has started giving off that characteristic aromatic smell. In my experience that's also when it starts going soft.

If they pick it green enough to use as a vegetable, and that's the only way you can get hold of it, then I don't like your chances. (But I could be wrong. Others here may know more.)

It would be a shame. A perfectly ripe jackfruit is divine :). I just cut up two big ones. I won't be able to eat all of it myself, because I've got another four ripening in the next couple of days.
The season here is nearly over. I've been pretty much living on them for the last two months. Just jackfruit and mango. Not one banana. :).

Amazing, BB! Sounds like Jakfruit heaven. Not a single banana!! You are very lucky indeed!I've bought Jakfruit in Asian Markets in america. It was good but not great. I think that's because it had been shipped & picked at least a little bit early. The ones I'm seeing here in India are hard as rocks. Thanks!

In my experience green Jackfruit will not ripen, as Bushbaby says, it just goes off.

When selecting them from the treee, I go for ones that are nearly ripe; they will have a beautiful odour and will give slightly. They also have a nice yellow colour.
When green they are only used for cooking.

If you pick them nearly ripe, wait for them to 'give' and smell delicious before you eat them.
If eaten under ripe (not recommended) you will also get loads of latex on your hands! (which can be got off by rubbing Olive oil onto your hands and then washing with soap and water).

Maybe you will have to wait until later in the season to get ripe fruit.
I would suggest asking at the markets if they can get you any ripe fruit or if they know when it is in season.

Priyam, I have only picked ripe jackfruit, but generally it does ripen atleast a little after picking on the rare occasion it is not fully ripe. When I lived in Bangalore, we used to readily find ripe jackfruit and the fruit and vegetable cart guys would go around selling ripe jackfruit. Hoopefully they sell it somewhere there too.

get it from the tree if it doesnt smell like juicy fruit dont pick it yet. if theres not flies buzzing around it it's usually not ripe and will destroy any knife you try to use to open it.
