That depends on the type of carbs. Carbs that come from starches like grains, beans, and tubers, will cause problems. Starches need insulin to be broken down in the body, and can only be converted to glucose. When the body cannot burn off the glucose, blood sugar levels may rise. Insulin is then put to work as a fat storage hormone. Elevated blood levels of insulin cause all kinds of degenerative problems, hormone problems, and premature aging.
Fructose from fruit however does not require insulin to be broken down. The body will only convert what it needs to meet its current glucose requirements and a few other chemicals. The rest passes into the intestines where gut flora feed on it. These gut flora are a source of our b12 as well. Bllood sugar and insulin levels remain low.
You might be interested in reading the book Wheat Belly by William Davis. A disclaimer is that he promotes eating meat, but his science regarding starchy carbs is good.

Pete, i wouldn't recommend meat, nor eggs to be honest cause you can't trust them being nutricious and provide you what you're lacking, cause the animals themselves are nutrient deficient, which is why so many people have problems with deficiencies and are suprised they are on an omnivore diet.
Be very careful cause you'll gonna shock your system if you suddently introduce animal fats.
I also had deficienceies when i couldn't afford veggies and fruit and was eating 2 meals of starches, if you're eating more starches than fruit/veggies, you're just not eating enough fruit, starches are "dead food" and "fillers". Add in more caloric fruits to help you out.
