Hey guys, any suggestions/recipes for coconut meat? I am buying up coconuts for their water as it helps me keep up my water intake! I mix about 1/3 CW to 2/3 Drinking Water :-)
But as the meat is so fattening (80%) we can't use it/eat it fast enough, and my freezer is full. Yes we will one day buy a nice big freezer and label it COCONUT MEAT, :) ..but in the meantime...? J x

Permalink Reply by Max Waters on March 17, 2012 at 12:45am Whenever I buy a coconut (which is very rarely), i drink the water and eat the skin. It may be fatty, but it's good fat, and I put it in the same category as an avocado: it's a treat :P
Permalink Reply by Chris P. on March 17, 2012 at 1:06am If you have friends/family who like milk, you could whir up the coconut meat in water and then strain out the coconut milk for them. It would go well on some cereals, as a base for sauces, especially Thai dishes, curries, etc. And that way you're getting all the use out of it, helping them to see that there are other options to dairy and giving them something a little more healthy. Who knows? Maybe it'll encourage them to keep a wider view on other dietary choices as well! :)

If you drink the water a lot, you will have SO MUCH MEAT you will NEVER be able to use it up. This is just basic mathematics. You will have freezers full. This is called hoarding.
If you give it to other people, you are enabling their high-fat diets, just like giving a meth-head more meth.
So just compost it, and it will go right into your garden and turn into more veggies. Don't think of it as throwing it out, think of it as high-quality fertilizer that will magically transform into WATERMELONS.
