I've bought a dragon fruit for the first time. It has a beautiful pink color for the outside, and a little soft when I touch it. How do I know if it's ripe and ready to eat?

They do ripen more after being picked in my experience. Once the greenish tipped tendrils begin to look a bit shriveled and the fruit has a put of give to it, dig in. Absolutely amazing fruit! One of my favourites.
