30 Bananas a Day!

Cooked Potatoes and beans cause I'm dead broke with a huge family...ugg

Tonight I had my first cooked Vegan meal in two months...I don't feel that great about it but at the same time as a man with a wife and four kids who aren't fruity like I, and since I don't get paid until Thursday which is  three days away, I just couldn't buy as much fruit today. Although I do have enough fruit for us all to share and enough for me to still get 1500 of my morning calories from sweet ripe fruit.

My wife has recently switched back to a cooked vegan diet and my kids do what she does.  I definitely feel so much better as a 100% fruit bat, and I still stayed 80/10/10........

Guess I'm just seeking a little encouragement!!!!!!!

Mmm lemon taters!! That sounds divine... maybe throw some Chives on top. Mmmmm.

I will  try that

ditto!

I like chopped cilantro and/or chives mixed in with potatoes.  Sweet potatoes mixed with tomatoes and a steamed veggie is real good too....sometimes I wrap this mixture in romaine leaves as a taco.  No salt needed at all...

Matt, I think you're making wonderful choices for yourself and for your family....wishing you the best.....

Thank you Myra

I don't want to eat cooked food..but I want to make sure that my little vegan munckins get all the the nutrition possible so when times are tough and I have to cook something....I guess the answer is yes to the whole acceptance thing...I just kinda hope im not alone..which it looks like im not so for that im blessed..

I live in central California in huge agricultural area...so finding ripe tasty fruit is easy...but I just switched jobs so the transition kinda put us behind a week...No worries though its only temporary...thank you so much for the positive feedback...I appreciate you

I'm right there with you. I've used up my savings on an all fruit diet and am back to the point of having to consider cooked until I find some more dough!

My favorite options are Potatoes (the purple sweet asian ones are amaaaaaaaaaaaazing) and Steamed Rice (Sushi, Sticky/Sweet, or Baldo Varieties). Also, CORN!!! Frozen or Raw, GMO or not.... it's high carb and high calories and I'd rather not starve :)  It's also super sweet!

we are in the same boat Matt but thankfully I will work if God's will few months later .... it is ok to eat cooked vegan and rice although I hate it without salt . I am not happy without my fruit I love sweet ripe fruit and without it I feel like going crazy ... I had too much frozen fruits I froze them  for the time in need that was my plan but they are gone now .

Matt, I have four kids too and I know how much it all costs. When you don't have fruit here are two recipes that I feel are a great compromise: rice with avocado and lime squeezed over it (no salt!) and boiled potatoes with avocado. The avocado distracts you from the missing salt and oil we are used to. But the most important point I want to make is to not feel guilty while you eat. This is worse for you than the cooked food. Focus on being grateful that you have food to eat at all and that it is fairly healthy. Good luck!

I love ur recipes thanks a lot :)

Thank you so much Steph..
