I thought I would share with everyone that isn't aware of how tasty a raw choko is, how tasty a raw choko is! Very (tasty that is)! :D
Peeled and eaten straight or grated and chopped for salads, it is a very refreshing, crisp and slightly sweet vegetable. After seeing them featured in one of Doug's recipe books I ate one raw, for the first time, about a month ago and discovered I love the flavour and crisp texture.
They are part of the Cucurbitaceae family (melons, squash, cucumbers). They look like this:
Can be bunged in food processor to make choko 'rice'. I love 'em straight or in a simple salad such as grated choko and baby beet drizzled with lemon juice.
They are a terrific crisp snack after lots of sweet fruit.
