Hello beautiful fruity people!
So I have two cases of bananas that are pretty yellow (still green stems). Great right?
The problem is that I will be leaving and not coming back until next Sunday (9 days!!), and they will be sitting by themselves to ripen...
Can I put some of them in the freezer/fridge now (before they're ripe)? Or would that spoil them? Would it only work after they're spotty??
Please help me save my bananas!
Permalink Reply by mathyou on March 10, 2012 at 1:34pm If they're yellow now, I doubt they'll still be edible in 9 days. Since you've got so many, you can try an experiment and let us know what worked best. Leave 1/3 out to ripen, throw 1/3 in the fridge, throw 1/3 in the freezer.
I'm thinking the freezer will win. Might not be fully ripe when you peel em now, but at least they won't be rotted. Make it the last thing you do before leaving, so they can ripen up a little more before peeling em and storing em in the freezer.

I will not be leaving until tomorrow night. I could also get someone to put them in the fridge/freezer for me when I'm gone. Would that be better than putting them in the fridge/freezer now?
Permalink Reply by mathyou on March 11, 2012 at 4:26am Yea, then have someone peel and store em in a freezer when they get pretty spotty. I use big zip lock bags and suck all the air out. I can only fit 14 or so in a bag, so it's kind of a lot of bags/work to store 200! lol.

Yeah, I am wondering if getting someone to put them in the fridge/freezer after I'm gone is better, or putting them in the fridge/freezer BEFORE the ripen is better...hmm...

I don't have those green bags, and don't really think I can get them anywhere around here. That's good to know for the future though!

I think if I peel them and put them in the freezer they wouldn't ripen properly...

I decided to give one box away to the soup kitchen here (feeding more people bananas, yay!), and I'm going to keep one box. I'm going to get my friend to put them in the fridge/mostly freezer.
Permalink Reply by Whitedi ellen on May 16, 2012 at 1:32pm Oh sure Esra, I freeze lots of my bananas for the same reason and I usually do it when the bananas are just starting to get little brown specks, I really like making ice cream out of them and I find them to be much more pleasant tasting when their not too ripe. I remove the skins first and freeze in freezer bags. It's the only way to prevent the loss of many banana's. I found a Yonana machine at Bed Bath and Beyond for around $50.00 and it works great.
