Every couple of weeks I will experience a mild headache for a couple of hours before bed then it will be gone the next morning. I've read that eating over-ripe bananas will give you a headache and I'm pretty sure that's the case with me.
The thing is though I eat 20 bananas a day and buy about 200bananas or so every week. There is like no way I can not eat a few bunches of over-ripe bananas. For you guys and gals out there who eat a lot of bananas what do you do to make sure you eat your bananas on time?
With the amount of bananas I eat I don't see how I could plan things out properly. I can usually get about five of the days of the week with good ripe bananas, but around the time I need to buy more the bananas I have our getting over-ripe. Oh and I still don't eat the really mushy parts of the over-ripe bananas. I just eat the still solid, but soft parts. Apparently that's not enough because I still get headaches.

Permalink Reply by Nathan on April 27, 2012 at 5:48am Yesh it's definitely fine.. it's been my strategy of choice for preserving ripe bananas for a while. They will be good for another 3 days or so.. the peels turn dark but the flesh will be fine.

I think in the end I will cut down on my banana consumption anyways because I don't want to deal with over-ripe stuff anymore, ugh.
Only thing else I can get cheap here in Washington though is organic apples. I'm gonna be eating so many lol. This is gonna be kinda hard lol.

A lot of people think it ruins them because they go brown but really they are fine. It does stop the ripening process though so make sure they are good and ripe before you put them in.
Permalink Reply by melonhead on April 27, 2012 at 6:01am We totally freeze out bananas when we get them bulk- we cut the bananas up, by hand, put them in baggies and lie them flat in the freezer. We have found this to be the easiest and most effective way to pack them in the freezer before use in smoothies, which I loooooove. I hope freezing bananas doesn't change anything nutritionally because they make my smoothies taste like milkshakes! (Ew, a pus-filled milkshake. You know what I mean, though! ;) When I was offered a case of bananas for free and wasn't sure if there was room in the fridge, I took them anyway and I swear, we found room!! Good luck!
Overripe bananas can consist up to 1% of their weight of different alcohols, of which some can cause headaches already in small doses. Also, the riper the banana, the more histamine it will contain. Some people are more sensitive to histamine than others, so you could experience a histamine-headache.
Another explanation that comes to mind is chronic dehydration. How often do you have to pee at night?
