Soo I have been waiting to begin a banana mono island to start off my low fat high carb raw vegan lifestyle. However I am not to sure if the banana's are ripe yet.. They are really spotty and mostly yellow but the stems are still green and so are their bottoms. As well I ate a few and the skins were quite thick.. I know that banana's need to be spotty but are they ok if a bit of green is still on them??

Permalink Reply by Esra on March 2, 2012 at 4:10am Hm, the skin being thick makes it sound like they're not ripe yet...but it depends. Sometimes even when there is still green on the stem they're ripe...
I would wait a couple of days anyway, just to be sure.
If once you start your banana island, the ones in the bottom start getting "REALLY" spotty (like almost covering the whole banana) you can put them in the fridge you slow down the ripening process as you make your way through the box :).
